Farm-to-table is a social movement where restaurants source their ingredients from local farms. But what about table-to-farm?
Many people find a way to send food waste or the by-product of the food they produce back to the farm. The students at Telstar, Woodstock and Crescent Park scrape their leftovers each day into 5-gallon buckets. Some of those scraps feed a passel of pigs in Newry. Call it scrap-to-slop!
The Belted Galloway cows at Gould Academy eat the by-product of Steam Mill's brewing process each day, with none of the side effects of regular beer consumption.
These valuable collaborations lead to less food waste and extra nourishment for animals and gardens. What table-to-farm partnerships have you heard about? I would love to hear from you.
