It was hard to pinpoint the trend, or non-trend, I was noticing in new Portland restaurants, but the oval plates, spindle-back barstools and Caesar salads were saying something to me. 


I'm thankful that the people who run Dry Dock, Gill's and Benny's, along with Sean Wilkinson of branding firm Might & Main, were able to help me articulate it a little bit better. 


These places are meant to feel classic, nostalgic and timeless, they said. Right now, they still have a sheen giving them away as new, but let's hope they're around long enough to form the patina that will make it seem like they've always been there.
